The glycemic load or index is due to the ingestion of refined carbohydrates such as white bread and sweets. These foods cause a sharp rise in blood sugar levels.
Some tips to help reduce these spikes:
Avoid foods made with white flour and sugar. Eat protein and/or fat with carbohydrates to slow the digestion. Eat foods high in soluble fiber.
